Quick and easy dinner: Acqua pazza

Do you go fishing? Do you like fish? Here is the recipe, which is quick and tasty for busy weekdays!

Once you have put a lid on, you can make another dish like salad whilst it’s cooking.


Whole fish (Bream, snapper, or even white fish fillet like flathead)

2-3 cloves of sliced garlic

8 cherry tomatoes

1 whole sliced zucchini

8 mixed olives

50mL of dry white wine

3 tbs olive oil

Italian herbs such as parsley or Italian basil (optional)


1. Put a frying pan on high heat with 1-2 tbs olive oil, then put sliced garlic and heat until it becomes aromatic.

2. Put a whole fish into the pan on medium heat and cook roughly each side.

3. Add all vegetables (tomatoes, zucchini, and olives) into the pan, then sprinkle the white wine.

4. Put a lid on the pan and cook on low-medium heat until the fish is cooked.

5. Serve with chopped Italian herbs and a drizzle of olive oil.

Dip bread into the left-over sauce! Yummy!
